Adam Erace finds good barbecue at Holy Smoke in Roxborough. Just read his description of the chicken and waffles.
The classic Harlem-born duo takes time, Taylor says. A full 12 minutes to get the breast, thighs and drums fried perfectly. A 24-hour brine kept the meat so moist, a ShamWow couldn’t sop up all its juices, while the thorough dredging in well-seasoned flour gave each piece its crackly, golden coating. The meat arrived over a fluffy Belgian, its pockets like reservoirs for the deadly good mix of soft butter, hot sauce, maple syrup and chicken drippings.

Trey Popp travels to Roxborough in search of a bargain stuffed burger. And despite a few minor quibbles, that’s exactly what he finds at Roxburger.
It could have used a garnish — even just a few sliced onions would have beat the empty bun (turns out such toppings are available if you ask) — but the meat itself was moist, done exactly as I requested it, and the tasty filling somehow didn’t ooze all over the place, a hazard I’ve come to expect from the $10 jobs at Good Dog. For $5.75, doctored with a squirt of spicy brown mustard, it’s as good a deal as you’re likely to find.

When it comes to Roxborough there are just two cheesesteaks. And much like you’re either a
Pat’s or
Geno’s person, you’re either a
Chubby’s or
Dalessandro’s loyalist.
Interestingly the defenders of Chubby’s usually point to the hours, bar or cheese fries as the reason they prefer Chubby’s. But at Dalessandro’s, it’s all about the sandwich.
