Posted by Foobooz on 7th January 2010

Kyle Grayson has packed a bunch of experience in a short time. After attending the New England Culinary Institute he came to Philadelphia and has worked for Stephen Starr at several restaurants, Root, Witch American Bistro and Blackbird Eating Establishment. Starting next Thursday he will be the chef at the Institute where he’s cooking up an eclectic menu of bar food.

Saturday Beer Geek Happy Hour

Posted by Foobooz on 11th September 2009

The Saturday Beer Geek Happy Hour is a regular occurrence at the Institute. It runs from 4 to 6pm and craft drafts and appetizers are $2 off. This Saturday the Institute is serving up three St. Somewhere drafts as well as other American brewed Belgian style beers.

We just spotted a very pretty bottle of St. Elsewhere Somewhere at Village Whiskey the other night. As bartender Steven Siebert said, “who knew they brewed good beer in Florida, in fact who knew they let it in the state.”

The lineup:

  • St. Somewhere Pays du Chene
  • St. Somewhere Saison du Chene
  • St. Somewhere Pays du Soliel
  • PBC Bi-Berry
  • Dark Horse Sapient Triple
  • Bruery Orchard White

Kitchen At The Institute

Posted by Foobooz on 4th May 2009

The Institute’s often delayed kitchen is getting closer. Chef Brian Bosch is aiming for on or around May 29th.  Bosch comes from Parc and is installing a “Puerto Rican Fusion” menu, combining authentic Puerto Rican spices and sauces with preparations that range across the board.

Living on the Vedge got to sample the vegetarian options a bit back. Check out the latest menu highlights after the jump.

Rick Nichols On Prohibition Taproom

Posted by Foobooz on 17th November 2008

Prohibition Taproom

Rick Nichols is drawn to the Loft District’s Prohibition Taproom by three glowing letters, B-A-R.

The place had me at the BAR sign. On a commercial strip, who’d ever notice it? But here in the dark, not a mouse stirring (well, maybe a mouse) in the Loft District, it is something of a beacon and a safe harbor, as straightforward and direct as that hospital H.

A Few Looks At Prohibition Taproom

Posted by Foobooz on 5th November 2008

In today’s Metro, The Bite takes a look at some November openings including Prohibition Taproom.

The red neon “BAR” sign invites neighborhood folk and passers-by inside to check out the beer and food. The spot formerly held Maker’s Local and Canavan’s Pub but there’s reason to be optimistic the third time is the charm, as Café Lift owners Michael Pasquarello and Jeniphur Whitleigh are at the helm this time. The beers range from Lionshead to Allagash and pretty much everywhere in between. Gastropub fare dots the chalkboard menu, with the slow roast pork sandwich likely to become the signature dish.

Meal Ticket also has a first look and today Living on the Vedge finds love in the ProTap’s beer-battered green beans.
