TCNF’s [Thai Chef & Noodle Fusion] dishes have the depth of flavor to allow it to stand tall among its peers. All it has to do is recalibrate its barometer as to how much spice we can take. That would be hot.

Rick’s Steaks May Land On Broad

The wandering tribe of Rick’s Steaks may have a new home in the food court at the Park Hyatt at the Bellevue on Broad Street. Owner, Rick Olivieri is meeting today with officials from the hotel building.

Olivieri has turned down offers from other locations including at Broad and Arch.

The Continental Midtown has started a weekday martini hour menu from 5 to 7pm with wines, beers and cocktails available from $3 to $6 and small plates from $4 to $6.

Mémé’s A Gem

Meme Tartare

Adam Erace has lots of praise for David Katz’s Mémé.

The air-chilled, naturally raised Gianonne bird smelled like fall. Actually, every snug corner of the BYOB did, aromatic smoke and steam wafting from the open kitchen. Brown butter and cut wood and crispy animal skin.

Katz’s always-changing chalkboard menu clings to embers of autumn, while moving us gingerly into winter’s all-day braises and root vegetables: soft cubes of butternut squash aside two perfectly seared scallops; with a Canadian maple halo ringing a divine foie gras tart layered with caramelized onions and Fuji apples.

Frank’s Opens In Comcast Center

Frank’s Old Philly-Style Sandwiches has opened a stand in the Comcast Center’s subterranean food court. The sandwich spot from the same people who are behind the LaScala’s pizza location will feaure Philadelphia classics from hoagies to roast pork.

Et Tu Butcher and Singer

Rick Nichols scolds Stephen Starr’s retro-chophouse Butcher and Singer over its Caesar Salad.

The cart was wheeled out, wooden bowl poised. A little cheese was grated on the eager greens. A few croutons were administered. And - our faces fell in incredulous unison - a creamer-sized pitcher of Caesar dressing was poured over the thing. Poured over the thing.

“Skillfully prepared tableside”? Hardly. Which must have been a typical reaction. The menu now says “Caesar salad, plated tableside.” (To which I say, “What’s the point?”)
