Trey Popp finds that Noble: An American Cookery is more than a trend chasing restaurant built on environmental correctness. He finds it to be an excellent place to eat and drink.
[I]t would be hard to recommend any dish ahead of the grass-fed short rib, braised all day with veal stock and lemons. The outside was so exquisitely crispy and caramelized you’d wonder if someone had gone over it with a blowtorch. Yet beneath that outer eighth of an inch, the interior strands slid apart from one another at the merest prod. A relish of fava beans and parsley attempted to bring some garden balance into the mix, but the sweet onion rice pudding ensured a plate that couldn’t have been richer had it been cast out of gold bullion.

Regulars was a photo series and now a book by former McGlinchey’s bartender Sarah Stolfa. The hauntingly beautiful series features patrons photographed by Stolfa as she worked at the bar. Tonight check out the photographs and the book. Maybe you’ll recognize one or two regulars with whom you’ve been elbow to elbow.

Yesterday we linked
Michael Schulson’s name to a Midtown Village liquor license figuring details would quickly emerge. And sure details have materialized. The Asian small-plates restaurant will be called
Sampan and will be influenced from the chef’s travels in Japan, China and elsewhere in Asia. Meal Ticket was able to score an interview with the hunky Izakaya chef.
After experiencing success with Izakaya in the Borgata, Schulson had plans to do a 200-seat modern Asian restaurant in Philly about a year and a half back. The faltering economy, however, gave him pause. “I [didn't] want to do a huge restaurant that [was] going to cost $4, $5 or $6 million,” says Schulson. “I wanted to come back to Philly to do food in a cool, intimate setting, with something affordable for everybody. That’s what’s important in this economy.”

Things change quickly in Philadelphia’s restaurant scene. Perhaps some inner monologue can help you follow along.
We: Daniel Stern is opening a new restaurant.
Us: Yeah, Rae in Two Liberty Place.
We: No, not Rae.
Us: No? Rae isn’t happening?
We: It’s happening but won’t be called Rae. It will be R2L. We’re talking about a different restaurant.
Us: Oh yeah, the casual restaurant set to replace Rae at Cira Centre.
We: Nope, not that. That doesn’t seem to be happening. The space is being shopped.
Us: Hmm. Interesting. So what’s this other restaurant?
We: It’s going in the Science Center at 3711 Market Street.
Us: Oh, odd. A restaurant in a science center. Don’t know what to make of that.
We: Yep, Michael Klein says it will be called MidAtlantic. And you have to check out the description of it. “Culinary roots of the mid-Atlantic region.”
Us: What does that mean?
We: No idea. Guess we’ll have to wait to early Fall to find out.
Us: We’re looking forward to it.

Grub Street Philadelphia launched today with a slideshow of 22 notable Philadelphia burgers including the never before seen Village Whiskey behemoth. It’s a mix of sirloin, chuck eye roll and chuck topped with Rogue’s (as in the beer) blue cheese and sauteed foie gras. Yikes!
Sad/great thing. We recognized 10 of the 22 burgers without realizing the description was on the right-hand side.
