BBQ Update

Posted by Foobooz on 12th August 2009

Grub Street gets some precious nuggets of information about Percy Street Barbecue, the South Street barbecue restaurant from Steven Cook and Michael Solomonov slated for an October opening. It’ll be very Texan with brisket as king. There will also be salvaged materials from an unlikely spot. [Grub Street]

Meal Ticket has the latest on Rubb, Matt Levin’s Manayunk BBQ spot aiming for a September opening. It’ll be a small 25-seat spot with four smokers, each using a different wood. The menu highlight will be the exclusive Elysian Fields lamb served with a North African pepper sauce. Also, Levin’s pig mascot needs a name. Can you beat the names already posted?  [Meal Ticket]

Changes To Inspection Process

Posted by Foobooz on 7th August 2009

Philadelphia is changing its process when it comes to restaurant inspections. Although it stops short of the “scarlet letter” approaches of Los Angeles and Toronto, it does promise more inspections and a more scientific approach.

Joining a national movement for food safety, restaurant inspectors in Philadelphia have abandoned the “floors, walls, ceilings” focus that experts say catches chipped paint but often misses real public health threats such as undercooked food and chefs’ unwashed hands.

Instead, the city is phasing in a more scientific, “risk-based” approach that emphasizes food workers’ knowledge and behavior – do they know how contamination is spread and how to prevent it? – and calls for more frequent inspections of eateries that pose greater risks.

Former Pif Chef In At Coquette

Posted by Foobooz on 6th August 2009

Coquette’s Cary Neff drops us a line that Jared Fraser, former Chef de Cuisine at Pif is now running the kitchen at Coquette.

It’s just the latest twist for the French bistro at the corner of 5th and Bainbridge which has seen a litany of kitchen changes since its opening. By all accounts though Fraser is a good one, so here’s hoping he sticks around a bit.
