Trey Popp visits Percy Street Barbecue and is stuck between two quotes. Is “imitation the sincerest form of flattery” or does absurdity of conduct arise “from the imitation of those we cannot resemble.” That’s the conundrum facing Percy Street as it reproduces a Texas smokehouse thousands of miles from its home.

I agree that they went too high end to imitate texas bbq BUT the idea that bringing texas bbq to Philly is a bad idea is itself absurd. just as not everyone will travel to naples to eat pizza, not everyone will travel to texas to eat real texas bbq…if done right, you can travel without leaving home. yeah, our beef will never be as tasty as Texas beef but that’s not to say a good rendition isn’t welcome.

They are wasting O’shea’s talents by sticking to a contrived formula. But the brisket was good,ribs not so hot and the chicken was sahara quality. Bebe’s is much better and they now deliver to where i live in Center City.
