Our pal Tim McGinnis, a Johnson-and-Wales-trained chef and food writer, put together a hell of a cover story for Philadelphia Weekly about his experience as a culinary instructor at a juvenile treatment center. It features troubled youths with sharp knives, tragedy, hope and perspective in equal amounts.
