Embrace The New Silk City

Out with the old in with the better as Mark Bee’s Silk City Diner is not the old Silk.

Here’s a more important similarity with Bee’s other joint: The food is remarkable. Chef Peter Dunmire, the unstoppable force behind N. 3rd’s dreamy wasabi-spiked tuna burgers and addictive soba noodles, has rewritten the diner’s menu with characteristic understatement. Burgers, sure. Buffalo wings, whatever. In writing, it all sounds pretty basic. The real impact is at the table, when even a hummus appetizer turns out to be intricately crafted and richly flavored, with a surprise sprinkle of dried chickpeas on top. Formica tables notwithstanding, this “diner” is less Flo and more French bistro.

    Boooo! Down w/ new silk. Thank you for opening another restaurant like every other in town in a space the used to be unique and filled a niche. Ummm… N. 3rd is only like 5 blocks away, why do we need another one at 5th and spring garden? I’m sure the food is better, its probably damn good. But its nothing new, its not even interesting. Silk did unique music events at the bar and had one of the only 24hr diners going next door. Now its just like every other mildly expensive, gastro-pub esque, french-ish bistro in town.

    I was sooooooooooooooooo disappointed tonight. Just took 2 friends to Silk City…did not realize that they just changed chefs……I was not a happy camper…does anyone know where the last chef went?

    I forgot to add….I was there about 2 weeks ago when they had the chef who had reopened it…Then it was absolutely great! Don’t waste your time now.

    Chef Peter Dunmire who opened Silk City has returned up the street to N. 3rd. Evidently N. 3rd had slipped while he was starting up Silk City. It’s a bummer to hear Silk hasn’t been able to keep up without him.

    I ate at Silk this past week and had the empanadas. Unfortunately the pineapple salsa was obviously bad – it had soured. Doesn’t the Chef spot check/taste the food before service to check quality. Very diappointing !!

    This is disappointing. I ate there shortly after it opened and thought the food excelled in every aspect. I was planning my next trip back sometime this week, but now I’m having second thoughts.

    I ate there this past friday night with the new chef at the helm and it was awesome! I over heard the owner (Mark) telling some customers he wanted it to be a step up from the bar food Dunmire was doing, and focus on more classic American food. We had a maple glazed pork chop with brandied apples, and mashed yams which was incredible. We also had the new Silk burger with a housemade relish that was also very good. The mac n’ cheese may have been the best I’ve ever had also, (ham & peas! Mmmm) It seemed like great American food to me! Better than the spring rolly dumplingy eclectic-ness that was there before.

    Hi Melanie,
    If you look at the dates, you’ll see that Dunmire was back in the kitchen…I’m hoping to get back there this week before somebody else gets there…
