Does Craig LaBan need another bell? Often times a two bell review reads very differently, for instance check out how critical LaBan is in his Two Bell review of Fogo de Chão while he is much more positive in his Two Bell review of Xochitl.

    I think he needs 6 more bells. Or 94 more bells. There are two many factors to be evaluated for a 4-star system to work. A vast majority of places get 2 bells. It doesn’t mean much.

    I agree. The “two bell” tier covers a huge range of restaurants, ranging from mediocre to very good. The problem is that he reserves the fourth bell for the rare “trend setting” or one-of-a-kind establishment that sets a new national or local dining standard. He seldom uses it. The “one bell” category is for the bad places. So, basically, he’s left with only two rankings for 80% of the restaurants. That’s not granular enough and his two recent reviews of Xochitl and Fogo demonstrate that the “two bell” tier is too loosely defined.
