Chef Jose Garces of Amada has plans for an empire of four restaurants within the next few years. In addition to the already announced Amadita [Now known as Tinto], he’s signed the lease for an 8,0000 sqft Mexican place at 40th and Chestnut. Garces wants to do Mexican again because “I feel the work I did at El Vez is not quite finished.” And he’s shopping for a Rittenhouse area location for his fourth concept, Latin with Asian influences.
