Meaty, toothsome Chinese black mushrooms that are as plump and succulent as a rib-eye. Simply braised as a side dish, tossed with tofu or chopped up in a dumpling, they’re irresistiblethe essence of umami, that difficult-to-identify savory fifth taste.
